CARROT, GINGER AND COCONUT SOUP (for the crockpot)

6 carrots (chopped)
1 sweet potato (peeled and chopped)
1 onion (chopped)
2 tbsp of freshly chopped ginger
2 tsp of curry powder
4 cups of water or veggie stock
salt
1 can of coconut milk

Place all ingredients into slow cooker, minus the salt and coconut milk. Cook on medium for 8 hours.
Add salt to taste and add the coconut milk. Can put in blender or mash. Serve!

This is the perfect fall dish. Get everything ready in the morning and dinner is served when you get home!

NOT SO CHOCOLATE MILK SHAKE

1/2 avocado
3 ice cubes
1/2 cup coconut water
1/2 almond milk or rice milk or soy milk
1 tsp of organic pure vanilla extract
2 tsp of organic cocoa powder
handful of almonds

Blend all together in your magic bullet. Great smoothie in the morning


HOMEMADE LEMONADE

1 lemon
Liquid Stevia
Water

Place water into a larger pitcher and then add juice from 1/2 lemon. Cut up the rest of the lemon and add to the water. Add 5 drops of stevia. Serve and Enjoy! Delicious sugar free alternative!–


APPLE CINNAMON GLUTEN-FREE, DAIRY-FREE PANCAKES

1 egg
1 cup of brown rice flour
1 tsp of guar gum (can omit but helps bind)
2 tsp of baking powder
pinch of salt
1 cup of almond milk/rice milk
1 tbsp of olive oil
1 tsp of sugar (can omit because will add syrup onto pancakes)
1 apple chopped
Cinnamon (sprinkled over mixture)

Mix all ingredients together. Sprinkle cinnamon over entire mixture. If too thick, add a little bit of water.
Put in pan on low heat and cook one side until you see bubbles, then flip and repeat.
Serve with syrup (organic local syrup if possible). Enjoy!


VEGAN BROWNIES

These are great for kids (and adults) who are casein, gluten and egg free! They won’t know the difference!

1 can of black beans, drained and rinsed well (yes, black beans!! )
2 large ripe bananas
1/2 cup brown rice flour
1/4 cup of water
1/4 cup of unsweetened cocoa
1 tsp of baking powder
2 tsp of vanilla
1/2 cup of semisweet chocolate chips or carob chips
1/4 cup of oats (aim for ones that are labelled gluten free)

Preheat oven to 325 C. Grease an 8 x 8 pan. Combine all ingredients except for the oats and place in food processor or blender until smooth. Stir in oats. Melt the chocolate chops on a double boiler and then fold into batter. Pour batter into pan and bake for 20-25 minutes. Enjoy!
